We Are Opening A Bar In Houston!

anvilthumbnaillogo.jpgOk, Houston, I guess the word is out. Yes, Anvil Bar & Refuge is coming soon, and we hope to bring back the long overdue nostalgia and joy of classic cocktails to our city. Our new bar, Anvil, located at 1424 Westheimer, will be opening soon. Beneath the decades of former bar structure and traffic, lies a beautiful building with priceless windows, historic brick, and exciting features that are certain to make Anvil a site to see.

Of course, there will be cocktails as well. This time, however, the cocktails will receive the same care they receive at the nation’s best cocktails bars. We will have several types of ice, an enormous supply of unique spirits, the best bartenders in the city, and a cocktail list that actively seeks to banish the apple martini forever from Houston! Over the last year, I have learned one thing above all others: I love making cocktails for Houstonians! I can’t wait to show Houston more of history’s lost cocktails and our own modern inventions with the attention that every cocktail deserves.

In addition to great cocktails, Anvil will have a carefully stocked wine cellar built in an old loft positioned over the bar. Our beer list will include the best microbrews in the country, and we will offer alternative taps at all times that will change every week. We want Anvil to be a comfortable, but intriguing space that invites people to enjoy their time with friends while experiencing the joys of a good drink. What else could you ever ask for?

    Thanks everyone for your support and encouragement. I can’t tell you how excited we are, and I am looking forward to being able to serve each of you at our bar in the future. When I am not bartending at Beavers, I am doing construction work at Anvil, and since we are doing the renovations ourselves a lot of time is available to think about everything I want the bar to be.

    In response to some of the questions, yes, Randy, we will have food. We plan to have cheese plates, meats, sandwiches, pizzas, and desserts. So, not a full kitchen, but also a lot more than your average wine bars. I’m glad to see you taking notice of our efforts. I’d like to see a lot of industry types at Anvil when we open, and I hope that our late hours provide an option for those motivated by creativity and dynamic flavors. I love bartending for chefs because they always provide such and interesting perspective that bridges the gap between my bartending experience and my small understanding of the world of food. Thanks for the support.

    Katherine, yes I will be able to make that drink for you. I have even made effort to make sure we will have a constant supply of local heights honey when we open.

    Thanks again to everyone for the support. We are making steady progress and with a little extra work should be back on track after Ike. I hope everyone has a chance to come by at some point, even those of you from the likes of Seattle.

    Lennie, we definitely want to have a strong relationship with our local brews, and would love to work with St. Arnold’s to bring in some great beer. I’ll send you an email soon and see how we can work things out.

    Bill, trusted Austinites speak highly of you too. I want to try and come up there and sit at your bar sometime in the next month or so, just to get away for a day. I hope you can come down to Houston when we open or around then. I’m sure we will meet in the future at some point; til then keep pushing good cocktails in Austin.

    Given that I’m in Houston every 3-4 months to visit my sister’s family, and watch my niece and nephew grow up, this is very good news for me too!

    The only catch is that it’s 23.8 miles from my sister’s house, but I’ll make it work. :)

    I’m coming for a long weekend this Friday and probably won’t be back until February, but sounds like y’all’ll be ready for me to come get some drinks by then. Woo!

    Bobby, when I was in town a few weeks ago I went looking for your future new place and discovered, to my delight (unless I got my Houston directions wrong) that it’s a block from one of my favorite restaurants in Houston, Hugo’s. Now that I know right where it is, it’ll be a cinch to get there. Yeah you rite!

    Chuck - great; yeah we are right down the street from Hugo’s, which is just as exciting for me. I love Hugo’s. Anywhere you can get food that good and some Del Maguey Chichicapa mezcal is a winner in my book. Its like a two minute walk from us, so I have a feeling that I will be hitting them up before I come to work more often than I should.

    We recently found Justin at Textile. He is the most amazing bartendar, by far, in Houston. His drinks are the most creative and utterly unique I’ve ever had. Don’t you dare order “the usual” when you are at Justin’s bar. Tell him generally what you like and let him surprise you with something you’d never have dreamed up on your own. What a difference I bartendar could make! I had no idea!

    Guys, this is incredible, and I wish you well, even if from far away.

    I had the pleasure of sitting across from you and Kevin one night at Beaver’s; you guys have the right stuff. You understand.

    Love the name — the best bars are indeed refuges, not in the sense of the alcohol-induced haze, but refuges in the sense that they are magical pockets of earth where things are that critical bit better, where things are as good as they really can be, where, for a short time, our world and ourselves are as we would hope they might be.

    If I make it back to Houston, you guys are my only stop.
